Open-Faced Chicken Gyro

Ingredients
- 1.5 lb boneless skinless chicken thighs
- 1 lemon
- 1/4 cup olive oil
- 1 tsp salt
- 1 tsp pepper
- 1 tsp dried rosemary
- 1/2 tsp dried oregano
- 2 garlic cloves, minced
- romaine lettuce
- 1 bell pepper, I used orange
- 1/2 red onion
- feta cheese
Homemade Tzatziki
- 1/2 cup plain greek yogurt
- fresh dill, minced
- 1/2 lemon
- 2 garlic cloves, minced
- 1/2 cucumber, minced
- salt, to taste
Instructions
- marinate the chicken. take a large plastic bag and place the chicken inside with the juice of one lemon, olive oil, salt, pepper, rosemary, oregano, and garlic. set aside for at least 30 minutes.
- while the chicken marinates prep your other ingredients and make the homemade tzatziki sauce.
- cook the chicken in a hot skillet for about 4 minutes on each side or until the internal temperature is 165 degrees.
- once the chicken is cooked, cut it into bite sized pieces.
- assemble your gyro on the romaine lettuce with chicken, tzatziki sauce, red onion, bell pepper, and feta cheese
- enjoy! I served mine with a side of baked potato slices!
Tzatziki
- for the tzatziki sauce combine the greek yogurt, lemon juice, fresh dill, garlic, salt and cucumber.
