Greek Chicken & Tabbouleh Salad

Ingredients

  • 1 large bunch of parsley
  • 1/4 cup white onion, diced
  • 3 roma tomatoes, diced
  • 3 tbs. olive oil
  • salt, to taste
  • 1/3 cup quinoa
  • 5 lb. boneless skinless chicken thighs
  • 1 lemon
  • 1/2 tsp. dried oregano
Marinade
  • 1 lemon
  • 1/4 cup olive oil
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. dried rosemary
  • 2 garlic cloves, minced

Instructions

  1. marinate the chicken for at least one hour. 
  2. cook on a skillet or grill on medium-high heat. we cooked the chicken for about 6-8 minutes on each side (the internal temperature needs to be 165).
  3. for the salad, prep the quinoa according to the package and prep your other ingredients.
  4. chop the parsley very fine and add the tomatoes, onion, salt, juice of one lemon, 3 tbs of olive oil.
  5. once the quinoa is cooked, add it to the salad. toss to combine.
  6. serve with chicken on top or on the side.
