Lemon Dill Chicken Soup

Ingredients

  • 1.5 lb. chicken breast
  • 1/2 white onion
  • 4 garlic cloves, minced
  • 3 lemons
  • handful of spinach
  • RightRice
  • 1 cup of celery, diced
  • 1 cup of carrots, diced
  • 3 cups of chicken broth
  • 1 cup of water
  • 1/3 cup fresh dill
  • 2 tbs olive oil
  • salt, to taste
  • pepper, to taste

Instructions

  1. in a medium-high heat dutch oven or pot. add 1 tbs of olive oil and sauté the onion and garlic with salt and pepper for about 1-2 minutes.
  2. add 1 tbs olive oil. celery, and carrots, sauté for 3-4 minutes.
  3. place chicken breast on top of the celery and onion mixture. cover with 1 cup of chicken broth, 1 cup of water, and juice of one lemon.
  4. bring the heat to low and cover with a lid for 15-20 minutes.
  5. while that cooks, prepare the RightRice.
  6. once the chicken is cooked through and no longer pink, remove it from the soup and chop the chicken in small pieces and place back inside the soup, stir to combine.
  7. you may need to add more broth at this point but it is up to you.
  8. add dill, spinach, and juice from 1-2 lemons (heat still on low). cook for another 2 minutes.
  9. serve over RightRice (optional)
