Miso Ginger Gyoza Soup

Ingredients

  • 32 oz. miso ginger broth (purchased at trader joes)
  • 16 oz. frozen chicken or pork gyoza potstickers
  • 1 baby bok choy, diced
  • 1/2 cup sliced baby bella mushrooms
  • 1/2 cup shredded carrots
  • 2 inches fresh grated ginger
  • 1 garlic clove, minced
  • 1 bell pepper, diced
  • 1 tsp toasted sesame oil
  • 1 tsp sriracha (optional)
  • green onions, for garnish
  • disced jalapeno, for garnish

Instructions

  1. in a large pot over medium heat, drizzle sesame oil and add carrots, bell pepper, garlic, and ginger. sauté for 2-3 minutes.
  2. add diced bok choy and mushrooms. stir to combine and sauté for another 2-3 minutes.
  3. add the broth and sriracha. turn heat to low, cover the pot, and bring to a simmer. simmer for 10 minutes.
  4. remove the lid off the pot and add the frozen dumplings. stir to combine and cook for another 5 minutes.
  5. serve warm with fresh jalapenos and green onions.
